Tortas are Mexican sandwiches. You can make your own rolls, but here I’ve used a store bought Portuguese Bun. You can add sliced tomatoes if you want. A refried bean spread would go nice with this as well. You can dice up the chicken before you add it to the torta if you want.

Pollo Asada Torta Recipe

Ingredients

1 chicken thigh per torta, pollo asada recipe
sliced pepper jack cheese
chipolte lime mayo
sliced avocado
pickled red onions
iceburg lettuce
cilantro
crumbled queso fresco

Preparation

Grill pollo asada. When the chicken is cooked, remove from grill and cover with slices of pepper jack. Slice buns in half and spread with soft butter or margarine. Toast on a griddle on high heat to toast.

Assembly

Lay a piece of lettuce on each bun half. Place a piece of chicken on bottom bum. Spread some chipolte mayo on chicken. Add sliced avocado, pickled onions, cilantro and crumbled queso fresco. Enjoy.
