Slow Rendered Bacon with Spicy Chipotle Peppers and Ancho Chilis
Bacon rendered down with chipotle and ancho chili peppers. A little spicy and sweet. Great as a spread on tortas or toast. If you don’t want it spicy, hold off on the chipotle peppers.
Chipotle Bacon Jam Recipe
Ingredients
1.5 lbs. good quality bacon, diced
3 chipotle peppers in adobe sauce
4 Ancho chili peppers, seeded, torn into large pieces
7 cloves garlic, minced
5 tomatillos, quartered
1 medium onion, diced
1/4 cup apple cider vinegar
1/4 cup piloncillo sugar, or brown sugar
Preparation
Heat a cast iron pan on medium heat. Toast ancho chili pepper pieces for 1-2 minutes, turning often until fragrant and soft. Don’t let the peppers burn. Add the peppers to a bowl and cover with hot water and soak for 30 minutes. Remove from the water and add to a blender with the tomatillos, vinegar. and the chipotle peppers. Blend until smooth and set aside.
Heat the cast iron pan over medium high heat and add the diced bacon. Cook, stirring often, for 10 to 15 minutes until bacon begins to crisp. Lower the heat to medium and add the onion and garlic and cook for 2 minutes. Add the chili mixture along with the sugar to the pan. Lower the heat to medium low and cook uncovered for 30 minutes or so, stirring often. Awesome.
