Chorizo and potatoes covered with a fried egg.
This is a really easy recipe that works for breakfast or dinner. Potatoes (papas) cooked up crispy with spicy chorizo sausage. Add some cheese and top with pico de gallo salsa and a slice of avocado. Awesome.
Chorizo with Papas and Eggs Recipe
Ingredients
8 ounces Mexican chorizo
1 Yukon gold potato, dice small
1/2 white onion, diced
1/2 cup jack cheese, diced or shredded
salt and pepper to taste
2 eggs
1 avocado, sliced
pico de gallo salsa
chives, to garnish
Preparation
Heat a pan over med/high heat. Add a tspn or so of oil and add potatoes and onions. season with a pinch of salt and a bit of pepper. Cook for 3 minutes, stirring occasionally. Push the potatoes and onions aside and add chorizo. Break apart with a fork. Cook for 3 minutes more, stirring occasionally. Combine chorizo with the potatoes and onions. Raise heat to high and cook another 3-4 minutes, stirring occasionally. Once the potatoes and chorizo are nicely cooked and a bit cripy, remove to a bowl. Add the cheese and combine. Add a small amount of oil to the pan and lower the heat to medium. Crack eggs into the pan and cook to your liking. I like my eggs sunny side up with a nice crispy bottom. Serve with some sliced avocado and pico de gallo on the side. Would be great with some warmed flour or corn tortillas. Awesome.
