Chunky Avocado with tomatoes, cilantro, onions, and limes

This is our basic gaucamole recipe. We put this on all of our tacos. Guacamole can be kept in the fridge for a day or two. You’ll want to limit to exposure to air as much as possible. When you’re not using the guac, you’ll want to cover and refrigerate. Cover it will plastic wrap and push the plastic wrap right against the guac. If a bit of dark color appears on the top of the quac you can scrape it off and expose nice brightly colored better tasting guac below.

If I’m making lots of tacos and need to be a bit faster in putting them together, I’ll make a simple version that can put in a squeeze bottle. Much easier to put on a taco and it actually looks a bit fancier too. If you’re into that sort of thing. It will also last a bit longer in the fridge.

Guacamole Recipe

Ingredients

2 avocadoes
1 plum tomato –  diced small
1/4 of a white onion – diced small
cilantro –  small handful, chopped
1/2 lime
pinch of salt and pepper.

Prep

Just mix everything together with a fork until it’s the consistency you want. I like it a bit rustic and chunky. A little smooth.
