Spicy and Sweet Tomatillo Salsa with Honey
I love honey. It goes really well with spicy salsas. This is a variation on a toasted tomatillo salsa we make. It’s a little spicy and a little sweet. Goes perfect with seafood tacos.
Honey Tomatillo Salsa Recipe
Ingredients
6 tomatillos, husks removed, sliced in half
1 Tbsp olive oil
1 head of garlic
6 arbol chilis, seeds removed
1/2 cup honey
1/4 cup cilantro, chopped
1/2 lime, juiced
salt and pepper to taste
Preparation
Cut 1/4 inch off top of garlic. Loosely cover with foil and place in a 350º oven for 40 minutes. Remove and let cool. Squeeze cooked garlic into the bowl of a blender.
In a cast iron or heavy bottom pan, heat olive oil and add arbol chilis and cook, stirring for 2 minutes until soft and fragrant. Remove and add to blender bowl. Add tomatillos cut side down to pan and cook for 5 minutes per side. Remove and add to blender. Add honey, cilantro, lime juice, and a pinch of salt and pepper to blender. Blend until smooth.
Pour blended salsa into small pan and simmer for 10-15 minutes. You’re done. Add to a squirt bottle for easy use.
