If you want to make a day of cooking all your torta ingredients from scratch (and who doesn’t) then you can make your own rolls. It has a crunchy exterior and a semi-soft interior. Perfect for a torta sandwich.
Torta Rolls Recipe (makes 10)
4 1/4 cup flour
1 tspn salt
1 tspn sugar
1 yeast envelope
1 1/4 cup water
Add the yeast to 1/4 cup warm to hot water and let sit for 10 minutes till foaming
Mix the flour, salt and sugar in a large bowl. Add the remaining water and yeast mixture to the dry ingredients. Blend together well until combined. No need to knead at this point. Cover the bowl with a damp towel and set for 2 hours in a warm place.
Push down the dough and knead until smooth. 5 to 10 minutes. Divide into 10 pieces. Flatten with your hand to about 1″ thick and shape into an oval. Score the top lengthwise in two evenly spaced lines. Not too deep. Brush the top with olive oil and lightly dust with flour. Cover with a towel and set aside until doubled in size. 1 – 2 hours.
Bake at 360º for 30 minutes until golden brown.
